The best chocolate brownie

This recipe was taken from Gary Mehigan’s recipe in his Comfort Food book, however I’ve change the nut and chocolate elements.
I often make this for people’s birthdays in the office and it always goes super fast!

~ 150g butter, melted
~ 310g caster sugar
~ 55g dutch cocoa
~ 3 eggs
~ 90g plain flour (I use Orgran Wheat Free Flour and it comes out perfectly)
~ 1/3 tsp baking powder
~ 175g white chocolate
~ 80-100g macadamias

Grease and line a 20cm sqaure baking tray (or 30cm x 15cm)
Mix the sugar, cocoa and melted butter with an electric beater
Add in the eggs one at a time and beat until light and fluffy
In a separate bowl sift the flour and baking powder
Add to the cocoa mix and fold through (careful not to over-mix the air out)
Add the chopped nuts and chocolate and mix gently
Pour mixture into baking tray
Bake at 160°C for 25-30 mins (or until the top starts to crack a bit)
